But as always, start with Tres Agaves.Every agave used in the production of Tres Agaves is harvested in the Tequila Valley, the historical birthplace of Tequila.Each agave is hand-selected by jimadores with generations of experience, to ensure ideal maturity and quality.FermentationThis yeast is cultivated from the same fields in which the agave is grown, making it the ideal yeast for making our Tequila. This process takes place in shallow fermentation tanks to facilitate robust yeast activity.DistillationThe fermented sugars are then filtered and distilled twice in small alembic pot stills. After each round of distillation unwanted heads and tails of the distillation are removed.MaturationTres Agaves Reposado and Aejo are aged in fine American White Oak Whiskey and Bourbon barrels from Kentucky and Tennessee. Our Reposado Tequila is aged ~9 months and our Anejo Tequila is aged ~18 months.
